Coffee Cake Cookies
I found these viral Tik Tok cookies from The Palatable Life. She calls them “Gilmore Girls Coffee Cake Cookies.” I love everything about these! They pair nicely with coffee and an episode of your favorite show (Gilmore Girls anyone?).
Ingredients:
Makes 12 large cookies
Cookie Dough
1/2 cup butter, softened
1/2 cup vegetable oil
1 cup brown sugar
1 egg
1 tsp vanilla extract
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 1/2 cups flour
Streusel Topping
1/4 cup butter, softened
1/4 cup brown sugar
1/2 cup flour
1/2 tsp cinnamon
pinch of salt
Vanilla Icing
1/2 cup powdered sugar
1 tbsp. milk
splash of vanilla extract
Instructions:
Preheat the oven to 350 F and line two large baking sheets with parchment paper. To make the dough, add the softened butter, oil, and brown sugar to a stand mixer fitted with the paddle attachment. Blend the mixture on high until it is smooth, light, and fluffy. Add in the egg and vanilla extract, and thoroughly combine. Next, add in the remaining ingredients and mix until a dough forms (be careful not to overmix!). Set Aside.
For the streusel topping, add all ingredients to a small bowl and mix, using a fork or your hands. The mixture should stick together slightly but still crumble easily. Add a little more flour if needed.
Use a large cookie scoop to portion out 12 cookies, and shape them into balls. Smash them into a circular shape and make an indent in the center using the back of the cookie scoop or your fingers. Generously sprinkle the streusel on top of each cookie, filling the indent.
Bake at 350 F for 10-12 minutes. Meanwhile, make the vanilla icing by combining the powdered sugar, milk, and vanilla extract in a small bowl until smooth. After the cookies have cooled slightly, drizzle the icing on top. Best served while they’re still warm! Leftovers can be stored in an airtight container for up to 3 days.
Notes
To quickly soften butter you can boil some water, pour it into a small glass bowl and allow it to sit for a few minutes then dump it out and place the dish upside down over the butter for about five minutes. The steam quickly and effectively softens the butter without melting it. This works best if you cut the butter into cubes first.
When I made these, I noticed the cookie dough was a little bit crumbly but they baked just fine and the cookies weren’t dry at all.
I don’t own a large cookie scoop so I used a small one and used two scoops for each cookie. Each cookie ball should be roughly the size of a golf ball.
